I have set each user to autologon with choice, but it appears that this has to be done from each user's PC rather than doing the entire staff from one PC. Is this by design or did I miss something?

This is because a user can log in at any workstation. Therefore, the server has no idea WHO is logging on Where. Although, potentially it is possible to do, each workstation would have to be registered at the server. This means that each workstation would have to be given its own ID number or some kind of ID name. To get that ID, one would probably have to walk over to the workstation anyways.

The Autolog is something that you should only have to do one time (it should not matter if you install an update, that should not affect the autolog status).
